- 250 g wheat flour (Type 405)
- 1/2 tsp baking soda
- 2 tbsp cocoa powder
- 1/2 tsp salt
- 120 g soft butter (unsalted)
- 300 g fine sugar
- 2 large eggs
- 240 ml vegetable oil
- 1 tbsp red food coloring (gel)
- 1 tsp vanilla extract
- 1 tsp white vinegar
- 240 ml buttermilk
- For the frosting:
- 300 g double cream cheese
- 100 g soft butter (unsalted)
- 350 g sifted powdered sugar
- 1 tsp vanilla extract
Method
- Preheat the oven to 170 °C top/bottom heat (150 °C fan oven). Grease two round baking tins (20 cm) and line the bottom with baking paper.
- Sift together the flour, baking soda, cocoa and salt.
- Beat butter and sugar until light and creamy. Add the eggs one at a time and stir in well.
- Stir in oil, food coloring, vanilla and vinegar. Fold in the flour mixture alternately with the buttermilk in three portions.
- Divide the dough evenly between the molds. Bake for 28-32 minutes until a wooden pick comes out clean.
- Let the cake cool in the tin for 10 minutes, then turn it out onto a wire rack and let it cool completely.
- For the frosting, mix the butter and cream cheese until creamy. Add powdered sugar and vanilla and beat until light and fluffy.
- Layer the cakes and spread with the frosting. Decorate with red velvet crumbs if desired.
