- 175 g wheat flour (Type 405)
- 75g high quality cocoa powder
- 2 tsp baking powder
- 1/2 tsp salt
- 200 g fine sugar
- 120 ml vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 120 ml buttermilk
- 120 ml hot brewed coffee
- 150 g dark chocolate (for the ganache)
- 150 ml whipped cream (for the ganache)
Method
- Preheat the oven to 180 °C top/bottom heat (160 °C fan oven). Grease two round baking tins (20cm diameter) and line them with baking paper.
- Sift flour, cocoa powder, baking powder and salt into a large bowl.
- Stir in the sugar. In a separate bowl, whisk together eggs, vanilla extract, buttermilk and vegetable oil.
- Add the wet ingredients to the dry and mix everything together. Then gradually pour in the hot coffee and stir until a smooth dough forms.
- Divide the dough evenly between the prepared pans. Bake the cakes for 35-40 minutes, until a wooden pick comes out clean.
- Let the cakes cool in the tin for 10 minutes, then turn them out onto a wire rack and let them cool completely.
- For the ganache: Heat the cream until steaming, pour it over the chopped dark chocolate and stir until a smooth cream forms. Allow to cool until thick but spreadable.
- Spread half of the ganache on one cake layer, place the second layer on top and spread the rest of the ganache on the top and sides. Allow to set for at least 45 minutes before serving.
