Store and prepare strawberries properly
Strawberries are sensitive and should be eaten or processed as quickly as possible. They will last in the fridge for a maximum of two days. Wash the berries shortly before processing and only remove the greens afterwards so that no water gets into the pulp. For even more flavor, bring the strawberries to room temperature before baking.

Ingredients
- For the floor:
- 200 g wheat flour (Type 405)
- 75g sugar
- 1 pinch of salt
- 100 g cold butter
- 1 egg (size M)
- For the curd filling:
- 500 g quark (20% fat)
- 150g sugar
- 2 eggs
- 1 packet of vanilla pudding powder
- 100 ml milk
- grated peel of an organic lemon
- For the strawberry topping:
- 500 g fresh strawberries
- 1 packet of clear cake icing
- 2 tbsp sugar
- 250 ml water
Method
- Preheat the oven to 180 °C top/bottom heat. Grease a springform pan (26 cm) and line it with baking paper.
- Quickly knead the flour, sugar, salt and butter in pieces with the egg to form a smooth shortcrust pastry. Press the dough into the mold, forming a small edge.
- Mix the quark, sugar, eggs, vanilla pudding powder, milk and lemon peel with a hand mixer until creamy. Pour the mixture onto the dough base and smooth it out.
- Bake the cake on the middle rack for about 30 minutes. Remove and let cool completely.
- Wash the strawberries, remove the greens and halve them. Cover the cooled curd layer tightly with strawberry halves.
- Prepare the cake icing according to the package instructions with sugar and water. Pour quickly over the strawberries and allow to solidify.
- Chill the cake for at least 1 hour before serving.
