- 200g peeled pistachios, plus extra for decoration
- 250 g soft butter
- 250 g fine sugar
- 4 large eggs
- 225g self-rising flour
- 1 tsp baking powder
- 1 tsp vanilla extract
- 125 ml whole milk
- pinch of salt
- 250 g butter (for the buttercream)
- 400 g powdered sugar, sifted
- 2-3 tsp rose water
- Pink food coloring, optional
- Edible dried rose petals for decoration
Method
- Preheat the oven to 170°C (fan oven 150°C). Grease two 20cm round cake tins and line them with baking paper.
- Finely chop the pistachios in a food processor. Set aside.
- In a large bowl, beat the butter and sugar until light and creamy. Add the eggs one at a time, stirring well after each egg.
- Stir in the vanilla extract. Gently fold in the ground pistachios, flour, baking powder and salt until just combined.
- Gradually add the milk until you get a smooth dough.
- Divide the dough evenly between the two molds. Bake the crusts for 35-40 minutes, until golden and a wooden pick comes out clean.
- Let the cakes cool in the tin for 10 minutes, then turn them out onto a wire rack and let them cool completely.
- For the buttercream: Beat the butter until light and creamy. Gradually add the sifted powdered sugar, then rose water to taste and, if desired, a drop of pink food coloring.
- Once the cakes have cooled, level the tops if necessary. Spread buttercream on one layer, place the second layer on top and cover the cake all over with the remaining cream.
- Decorate the cake with chopped pistachios and edible rose petals.
