- 50 ml almond milk
- 1 large egg
- For the Pistachio Layer:
- 60 g shelled pistachios (finely ground)
- 60 g plain flour
- 1 tsp baking powder
- 1/4 tsp salt
- 60 ml olive oil
- 80 g coconut sugar
- 60 g Greek yogurt
- 50 ml almond milk
- 1 large egg
- For the Mango Coconut Layer:
- 70 g plain flour
- 1 tsp baking powder
- 1/4 tsp salt
- 80 g fresh ripe mango (blended to purée)
- 40 g desiccated coconut
- 60 ml olive oil
- 80 g coconut sugar

Method
- Preheat oven to 170°C (fan). Line three 18 cm round cake tins with parchment.
- For each layer: In a medium bowl, whisk dry ingredients. In another bowl, whisk wet ingredients. Combine, stirring just until smooth.
- Matcha Layer: Sift matcha powder with flour. Pistachio Layer: Fold ground pistachios into dry mix. Mango Coconut Layer: Mix mango purée and coconut milk with wet; stir in desiccated coconut.
- Pour each batter into a prepared tin. Bake 18–22 min, until a skewer comes out clean. Cool in tins 10 min, then on a rack until completely cool.
