With lighter dairy swaps and just a touch of natural sweetness, this cake makes a beautiful centrepiece for brunch, birthdays, or afternoon tea. Whipped cream and Greek yogurt provide lift and moisture, while keeping each slice light and satisfying. You’ll feel good about every bite!
Gather Your Ingredients for Success
Start by setting out all your ingredients, including chilled Greek yogurt, cold whipping cream, eggs, vanilla, and whole grain flour. Prepare your cake tin (20 cm round) by lining it with parchment and lightly greasing the sides for easy release later.
Whipping Up the Perfect Cake Base
Whip the cold cream until soft peaks form—this is the secret to the cake’s dreamy texture. In a separate bowl, beat the eggs with sugar until pale and fluffy, then fold in the yogurt and vanilla. Gently fold in the whipped cream, being careful not to deflate that lovely airiness.
Mix & Combine Gently
Sift in the whole grain flour, baking powder, and just a pinch of salt. Use a spatula to fold everything together until you see no streaks of flour—be gentle to keep the mixture light. Pour the batter into your prepared tin and smooth the top with a spatula.
Bake Until Golden Perfection
Bake the cake at 170°C for 35–40 minutes, or until the top is golden and a skewer comes out clean. Let the cake cool in the tin for 10 minutes before turning it onto a wire rack. This step ensures your cake stays moist but doesn’t overcook.
Assemble & Dress with a Lighter Touch
Once the cake is completely cooled, whip up a small batch of cream and yogurt (with a drop of honey) for a light, tangy topping. Spread it across the cooled cake, letting it cascade down the sides for a rustic, inviting finish.
Finish & Serve with Fresh Fruit
Top your cake with a colourful mix of fresh berries or sliced peaches. The result is a show-stopping dessert that feels indulgent but is far lighter than traditional cakes. Slice and serve immediately—you’ll love how light and refreshing it tastes!
