- For the chocolate base:
- 250 g butter (soft)
- 220g sugar
- 4 eggs (size M)
- 260g flour
- 60 g baking cocoa
- 1 packet of baking powder
- 1 pinch of salt
- 250 ml buttermilk
- For the chocolate frosting:
- 200 g dark chocolate
- 100 g butter (soft)
- 200 g cream cheese (double cream level)
- 80g powdered sugar
- For the chocolate ganache (drip):
- 100 g dark chocolate
- 80 ml cream
- Toppings of your choice:
- Chocolate lentils, mini marshmallows, cookies, berries, sprinkles, edible flowers
Method
- Preheat the oven to 175 °C top/bottom heat. Line two springform pans (Ø 20 cm) with baking paper.
- Beat butter and sugar until creamy. Stir in the eggs one at a time. Mix the flour, cocoa, baking powder and salt and add to the dough alternately with the buttermilk.
- Divide the dough evenly between the two molds and bake for approx. 40-45 minutes (test with a chopstick!). Allow to cool, then cut both bases in half horizontally - you will get four layers.
- For the frosting, melt the chocolate and let it cool to lukewarm. Mix the butter and powdered sugar until creamy, fold in the cream cheese and liquid chocolate.
- Place one base on a cake plate and spread with frosting. Cover with the next layer and continue like this. Spread the outside with the remaining frosting. Chill for at least 1 hour.
- To make the drip, roughly chop the chocolate, bring the cream to the boil and pour it over the chocolate. Let stand for 2 minutes, then stir until smooth. Allow the ganache to cool until it is viscous.
- Using a spoon or piping bag, pipe the ganache along the edge of the cake so that it slowly runs down. Also paint the surface as desired.
